Crashing on Tahoe 26.3.1 and any version past 7

I am unable to use any major version past 7. I can navigate settings, change models, but attempting to record, I get the record window and then a sudden crash. 1-2 seconds of recording. I see the noise bars moving, if I'm quick, I can see it try to transcribe, but never pasting and always crashing.
